    This sausage pile, yes. Not all sausage piles are good. For example, a Pearl Jam show or the line at the merch truck. Those sausage piles are not as good.

    No, they come sweet. Nice and sticky sausages.

    Garlic scapes from garden. turned them into a nice compound butter.

    New at growing garlic. Someone told me to harvest the scapes. Blistered them up and mixed into butter with salt. Nice experiment.

    Made some bulgogi and put it over scallion pancakes and a thin bed of rice, tossed  some pickled onions and furikake, and some kewpie mayo. Just don't park your food truck next to mine! Ha!

    Seared  up some pork

    Got it last night. Seasoned it up heavy. Put lemon lime and orange in the bag overnight. Dutch ovened after the sear. Beer, Vidalia onion for a long time. Burned some poblanoes. Crumbled them in there.
    Fantastic pile of pulled pork. Good for a while. Nice life.

    Looks great. Pork's so underrated, because people overcook it a lot of times due to the fear of undercooking pork. Safe temp for pork is about 145ish and at that temp, there will be pink. People generally just get uncomfortable seeing pink in pork. So they toss it back in the fire then when it's pulled back-out, it is 100% guaranteed tough meat.

    Haven't Dutch oven-ed anything in a while. Time to get some short ribs!
