Got it last night. Seasoned it up heavy. Put lemon lime and orange in the bag overnight. Dutch ovened after the sear. Beer, Vidalia onion for a long time. Burned some poblanoes. Crumbled them in there. Fantastic pile of pulled pork. Good for a while. Nice life.
Looks great. Pork's so underrated, because people overcook it a lot of times due to the fear of undercooking pork. Safe temp for pork is about 145ish and at that temp, there will be pink. People generally just get uncomfortable seeing pink in pork. So they toss it back in the fire then when it's pulled back-out, it is 100% guaranteed tough meat.
Haven't Dutch oven-ed anything in a while. Time to get some short ribs!
