My lunch for the past three days. Fried tofu seasoned with smokey Texan rub, served with kale, avocado, chargrilled corn, hummus and roast pumpkin, quinoa, and toasted sesame seeds. Inspired by a similar dish I had at a cafe last week.

@Thoughts_Arrive I like how determined you are with your dishes. They always look great to me, but of course, I can't taste them. You have a chef's mentality when it comes to your dishes, it seems. You want perfection.
Jose, I used to do tamales with pulled pork like that. I no longer have freezer space for a batch of tamales, but making them was always worth it because of how long the food would last.I SAW PEARL JAM0 -

Lunch - had leftover half head of cabbage and a few onions.
Those who sell cabbage short are missing out.
Onions....then butter...then water/tomato paste/cayenne/cabbage/salt/pepper
