I love a nice breakfast. I love going out and having someone ask me, " would you like more coffee". There is just something about someone else cooking me bacon and eggs that makes it better than if I cooked it at home.

    BUT

In the last 5 years? Now that bacon and eggs cost me $20, when I go out? I just can't justify going out for breakfast as often as I did in the past. Bacon and eggs shouldn't cost me the same as going out and getting a strip steak.
Increased restaurant costs are a big reason I like cooking at home. I feel like I can do basic breakfast just as well as most breakfast spots. I'm pretty happ0y with how the hash browns turned out. I did a thinner cut in the food processor

We rarely go out to eat as a family. It is 100% more for the time together with my soon to be gone daughter than the food. Everything we make at home tastes better and is better for you. Except my wife's pork katsu and Japanese fried chicken, which are definitely not good for you. Damn tasty though!

Edit: For breakfast potatoes I have always done cubes. Now it is 50-50 yukon golds and sweet potatoes. May be a jalapeno in there depending on what we have.

It’s funny you say that Speedy. I recently took my daughter to our local diner. We had coffee, omelettes, bacon, toasted bagels and home fries. The bill? $68. Before tip. Yeah not going back even though it was good.
Same here.  Four of us went out.  Had normal breakfast, no mamosas or anything, just coffee.  I had hash and eggs.  Not fresh hash either, that would have been triple the price.

    $98.

Something is wrong when it costs $100 to take your family, or even one kid, out to breakfast. Another reason we do not go to restaurants.

    WOW!

You live in a Big City?(l NYC Chicago, Boston, etc.)

When I go to the Diner, I'll get a Ham & Cheese omelet w/Home Fries with a large Milk and that cost over $18 and I think that's too much money.

First time I went to Japan I was taken to a small sushi bar somewhere in Yokohama. That chef is long gone, but I still have a hand painted tea cup from him. The meal was amazing, they admired my ability to eat things most Americans would not. They tried to make things Americans would not like. As is traditional in Japan, the last course is miso soup. Except this time there was a surprise in mine. Hint it is not clams or crab. Frog. Specifically Frog stomach. But when I ate it with a smile suddenly bottles of sake showed up.

Truthfully, it did not taste unique. But it did have that offal texture. But none of that poop taste that comes with chitlins.

    Thumbs up.
If I feel sick it is a few cups of vodka.   Kills it.

Never in my life have I made a decent hash brown. Never.
    I gave up trying. Haha
Peanut oil. I either use an unhealthy amount of oil, or even worse, I patty them and deep fry at 375 in a saute pan. I temp gun the oil when I deep fry anything nowadays. Takes the guessing out of whether I'm gonna get greasy, perfect, or burnt hashbrowns.

Greasy hash browns? Sure, Ive made those 100 times.
Burnt hash browns? Sure, Ive made those 100 times.
Perfect hash browns? Never in my life have I made those.
Edible hash browns? Its a 50/50 chance of me making those.

The trick with hashbrowns is getting the starch and moisture out before cooking. I usually shred the potatoes and then give them a number of rinses in cold water until the water is not very cloudy. I then drain and let the potatoes sit in a colander and let some more of the moisture dry off. Finally, I ball the shredded potatoes up in the middle of a dish towel and twist until whatever residual moisture has been extracted from the potatoes. From there it doesn’t really matter too much what oil you used just don’t use olive oil. Use something with a little higher smoke point. Avocado oil and coconut oil have given me good results, but regular vegetable and canola oil work too. Steady temperature helps as well. I try to keep my cast iron around 350F. Also, be patient. Don’t flip too soon.
