    On my quest to find that piece on Mexican food in the city on NPR I uncovered a story about a white guy from Oklahoma that Kills it in the Mexican restaurant business and is given shit by a few people and others ran with it a few years back. Chefs name is Rick Bayless.  I think they don't bother him anymore.

    Dude sounds legit though.

    True. Will hit some more now. Had a rib bone. Threw that in With the beans some H2O. Crumbled chipotles. Tomatoes from the garden.  Cracked a few eggs and let her go. Can't replicate that. Unique every time.

    I love it. Clean out the pantry, the fridge, and throw some eggs on it. Heat up a tortilla. Use up the salsa, tomato sauce, the vinegar, the hot sauce etc. Always good.

    Is this a bit sarcastic? Rick Bayless is the celebrity Mexican chef. For at least two decades. Frontera Grill in Chicago. He is legit but still gets some shit for commercializing his brand. Alex Stupak was the one that really started the popularity of Mexican restaurants in the city.  Before him it was the same old enchilada, beans and rice plate. Now there are many legit places to get a taco without traveling above 96th street or to Queens. As long as you do not mind paying $8 a taco (or more). There are some legit mexican places near me in Port Chester, NY. And I do love the Bar Taco chain, even though I cringe when I get the bill.

    I picked up some mussels, palourde clams and Hokkigai clams. Gonna drop them into a Portuguese rice stew.

    The carb loading is kicking up, have 2 races this coming weekend.
    Lot of rice and sweet potatoes....chicken, peppers, asparagus- had more rice and potatoes as well.

    Cheaper than the way that most people choose to eat, as well.  I bought organic stuff but if you didn't the meal would be pretty  basic and there were lots of leftovers.

    I love carbs so loading up in never a bad idea.

    Sure is!  The High Life in the middle really brings it all together.  Wife and I going to New Orleans for her 40th in a couple weeks...have never been.  That place is already on my list.

    It turned out okay. I probably should have added more yeast, but I was rushing. Pics look good but dough wasn't fluffy like a good Sicilian.
