I was craving beets and had some, so I made a mock beet risotto last night. Mock because it is not the right rice, and there's no cheese in there. I added fried pork sausage at the end, as well as some sour cream. It hit the spot. I love cooking with beets, the color alone makes me happy.
Uhmm I’ve never had beets this way looks very enticing! I usually just eat beets cold in salad just oil & lemon salt pepper

I know beets are good for me. And twice a year I go for the most cliched beet dish.......roasted beets with salad, goat cheese, walnuts and dried cranberries.

Took Client out in Vegas on Monday night.
Look at these frigging prices. -- I did not order the $265 steak, but I did laugh at it.
(I did enjoy a very good steak, just not that one.)

I will not pay those prices in the US.  But $400 Teppanyaki on the top floor of a hotel in Japan. Hell yes.

It is a Japan thing. We are talking A5 wagyu.  And it is a set meal, not just the steak. Amuse, salad, appetizer, garlic rice, dessert etc.
Edit: the biggest scam in the US is Australian or US Wagyu. It is not even close to the real deal.

I love them pickled too! And sometimes I make a salad, with raw diced beets, an apple, horseradish, sour cream, some olive oil, salt and pepper. Your fajitas looked amazing too!

It's 44 OZ, so not intended for one person. (though I know a couple of folks who might be able to put it away). But still crazy expensive. This is not your grandfather's (or Wobbie's) Vegas of the $1.99 prime rib buffet anymore.
    This weekend we rock Portland

I’m not sure. I cut up the beef, my wife coated it in something, it sat in the fridge all day and then I “put it together.”

We used to get the $2 midnight to 4:00 am steak dinner at the Horseshoe. Steak, baked potato, salad and bread for two bucks. 50 cent beers at the bar.

I haven't, but you could easily stuff them with cabbage and mushrooms and add some soy, mirin, chives, etc.
