don’t know about the northern italian, but I had a buddy in vegas who had been a sous chef at caesars palace and later cooked at a “real” italian place in a strip mall. the sauces were much more brown than red. food was incredible. funny, tho, one night we capped off all the italian food with shots of ouzo.
If I had known then what I know now...

How I wish to live there.
One of our best meals too, she had vegetable dumplings and soup and I had Marende, a platter of all local Alto Adige Speck PGI, hay cheese, good German bread and red wine.
Amazing.
What did you do in Bolzano? We went up through Nova Levante up to Carezza/Karerpass and hiked around. Stayed at the Hotel Alpenrose on a whim and had the best time of our lives.
