    In my opinion and experience, only 120 minute and maybe a few other triple ipas can be cellared.

    I've aged Devil Dancer and think it;s fantastic after 1 year. But really, this guy speaks the truth, ipas or hoppy beers are meant to be consumed fresh. The fresher, the better.

    How long do you think 90 minutes can be left in the bottle?

    probably make a shitload of money off it too.

    I know If I saw it out somewhere I'd have to try it, and probably get an extra sixer to keep for sentimental purposes - regardless of how good it is...

    I wouldn't count on them making anything close to a shitload of money. I mean Fox has a ton of lawyers on staff to protect their trademarks when it comes to this type of thing. Unless the people making it are living somewhere, where trademark and copyright laws don't apply I can see them getting sued back to the stone age.

    It's going to change a lot after 90 days or so. It's still good after a longer period of time, the hops just fade making it a much maltier, sweeter beer.

    For anyone in TX, especially Houston (Shep & I) craft drinkers, the new Southern Star ProAM DIPA is killer. Freshest, piniest, hopjuice bomb i've had in TX since moving out here from San Diego. Seriously rivals some so cal dipa stuff.

    the front end actually has me thinking of pliny, really good shit.

    p.s. shep-pliny's may be here next week.

    The second batch is already in the primary :)

    Have you tried a Flanders Red or Oud Bruin yet? Perfect gateway to sours. Seek out something simple like a Monk's Cafe or Rodenbach. Sours were the last thing I got into and there's been no looking back.

    Thanks for your response. 90 minute IPA is my favorite beer of all time so I bought a case and am going to spread out the consumption of it over maybe a year or maybe like 3/4 of a year to see how much it changes.

    You know what's weird? My palate tells me that 120min actually gets LESS sweet after a few months in the bottle. I don't really know how that's possible -- maybe something to do with additional fermentation consuming some more of the residual sugars? I really don't know the brewing process as well as I'd like.

    Note that I'm really only talking about 120 here, no other DIPAs, etc, have done that to me.

    So I have 24 in a case

    Then have 1 bottle every other week until the case is gone
    The beers at the end will be aged one year

    Thoughts?

    DRINK THEM UP! If you like IPA's its for the reason they are a tad bitter and hoppy, right? Guess what happens folks when you age your IPA's? They get mellow...doesn't mean they won't be good, they are different.
    I did this with a 4 pk in Nov 2008 - and I drank one (properly stored) each year on my birthday. November 2011 was almost undrinkable and also unrecognizable...Greg Koch, from Stone Brew, had an amazing spiel about this subject a few months back... He said for the highest alcohol content DIPA's and such, up to 7 wks (again, properly stored) at the MOST - and to expect it to taste different (not bad, just different).
    I have also found any with citrus (Racer 5, etc...) turn to cat piss flavor. I have only had 1 old IPA (over 1 year) - it was a Lagunitas Sucks and I still can't believe it was a year old (twas very drinkable and tasty, believe it or not).
    I am in the camp that IPA's & DIPA's need to be consumed immediately. Have fun storing - and for those of you that have, I'd love to hear your thoughts. Everybody's taste buds are different. IPA & DIPA are my faves - I will not make the mistake of letting them sit more than 2 mos ever again...

    I picked up a 4-pack of the ProAM last Friday and I have to confirm it is awesome.

    Only had 1 can so far, but more will definitely be consumed this weekend.

    I know its weird to say, but I feel the need to see how this beer ages, even though I do drink IPAs because I love their bitterness and the aroma. Maybe I will make my experiment last a shorter amount of time based on what you said and my gut feeling. Maybe I will in one month, and do one a week. Hmm, decision decisions :lol:.

    Just finished my 2nd bottle of the 10th Anny Ruination... I randomly found it on a shelf at a binny's in chicago when I was there 2 weeks ago... The best before date was 8/23, and I drank it today on 8/24...

    And i have to formally state that it is a tragedy that it was a 1 off batch... that beer was fucking amazing. I had never had the regular ruination before, but after comparing the two, the regular recipe doesn't even compare.... I hope they don't retire the 10th anny recipe permanently.... :cry:

    I agree with most of what was posted. I had a 6 month old Hopslam recently and it was nothing like what Hopslam should be. Good? Yes. Nectar of the gods? Nowhere close.
