I am mostly off rice, but that looks good!
I've done stuffed peppers dozens of times.
Never once thought of doing stuffed tomatoes.
I stuff tomatoes with either Tuna salad or Salmon salad over a bed of lettuce! I’m more inclined to eat tomatoes that way instead of cooked stuffed tomatoes
jesus greets me looks just like me ....

Why off rice? Carbs? I think brown rice is ok. Idk.

Brown rice, lentils, garlic, peppers, corn, basil, a little parm cheese. No olive oil, so i added a little chopped up butter. Would be great with ground beef or sausage. Bread crumbs would be good too. Whatever you have.
    Stuff your tomatoes speedy!

Stuffed peppers I'm sure hold up more. The tomatoes turn very soft and more like a sauce. Maybe I cook them too long.
Edit. Today I'd call it more of a vegetable risotto.

Yep. I can eat all the butter, chicken wings, and red meat I want, but my Dr. said cut out the carbs and the sugar. I have pretty much eliminated all carbs except for beans, one or two small bowls of Japanese white rice, and a few slices of Dave's killer low carb multigrain thin sliced bread each week. No more pasta, bagels, pizza or subs. Yes, I am that guy that orders a burger with no bun. It was much easier to significantly reduce and almost eliminate sugar. I definitely crave more rice, bread and pasta. Diabetes runs in my family so that is the health risk I need to guard against. Not a fan of brown rice, but I will eat it if there is enough seasoning added, like boatloads of garlic.

It is honestly not that bad. I think cutting fat or sodium would be harder. I actually feel better without the carbs. Less tired. Saturday is my cheat day. Usually a bagel with smoked salmon and cream cheese or a big bowl of pasta (usually chicken riggies for you NY upstaters). Sample recipe:

I love going out for a simple breakfast. I love being asked if I would like more coffee. I loved it more when breakfast for 2 of us was under $20 total and not $50.

I stopped going to the Diners around here in the NYC suburbs when they started charging $16 for an omelette (with no meat) and $17 bucks for a mediocre cheeseburger. Damn shame. Took my daughter for breakfast recently and the bill was $60!!! Before tip. Screw that. I make better food. We cook almost everything ourselves and make our own sushi. We do go out for Korean BBQ every couple of months, and it is $$$$$ to do it right.

There is just something about taking Kathy out for breakfast on a Saturday or Sunday. She feels the same. Its just something about getting my eggs over, hash browns, english muffin.....and her getting her strawberry waffle.

We have made thousands of breakfasts at home. I would still rather go out and have someone serve me. Its just better at a restaurant. But only breakfast!

    I agree with you.
I can cook better lunches and dinners myself

I hear you. Sometimes, it is just nice to be out of the house and waited on. Even if it is mediocre food.
