These turned out fucking great. First time doing anything other a same day dough recipe. Cold proved these for 24 hours (meant to do longer but didn't have time):

    Those look excellent.

Awesome pictures! I'm inspired. What cold-proof recipe did you use?

Pequod's if you can get there.

  • Suggestion is to not try and eat a "personal" deep dish pizza.  Personal apparently = 3-4 people comfortably eat.

Awesome pictures! I'm inspired. What cold-proof recipe did you use?
    280g warm water
    466g all purpose flour
    1.9g active dried yeast
    8g salt
    4g sugar
    1/2 tbsp olive oil

^Mix the water, salt, yeast, sugar in a bowl then add it to the flour in the mixer...add the olive oil after liquid is absorbed. Mix for like 5 minutes +. Divide into 2 balls and then throw it in the fridge for 24-72 hours. I did 24 hours. Hoping to do 48 hours this weekend...if I fucking remember lol

Awesome! Never tried it either. I thought I read somewhere you can order deep dish by mail frozen? Any info or feedback?
