    Home - Saverio's Authentic Pizza (saveriospizza.com)

    This is my go to as mentioned a few times in this thread, I have no affiliation with this place. ...I just find their pizza to be above & beyond pretty much all else. Nice Family operation, they were on the food network a bunch, Use great ingredients, lil pricey but you taste the difference for sure. The owner has some fancy lil oven, they are in a pork store  ;) I use to live nearby and get on weekly basis, now here & there when visiting my mom

    Some good looking pie! Fired up the ooni the other night for the second time and had much better results.   Probably firing it up again on Friday.

    Pie number one.  Still can’t get that crispy bottom. A little undercooked in the middle.   Outsides are great.  The journey continues….

    started timing the turns and we are near perfection. 20 seconds per turn. Pies 2-5 are stellar.

    I think it looks good. Do you you use the method of turning the heat all the way down as soon as you put the pie in the oven? I do that and usually it gets the bottom relatively crispy

    Yup we turned the heat all the way down and it definitely worked.  Thanks for the advice.  :)
    I think the problem with the first pie was that the stone wasn’t hot enough.

    My oven requires a 45 minute preheat. I have a Lynx (Napoli) gas pizza oven, but I think the same theory may hold true, I get much better results preheating double the recommended time. Also, I too, get a crispier bottom if I turn the heat down when I put it the oven. It comes out super crisp with zero bend. Keep experimenting and you’ll find what works best. It’s supposed to be fun.
