These turned out fucking great. First time doing anything other a same day dough recipe. Cold proved these for 24 hours (meant to do longer but didn't have time):
Thanks folks. The crust was toasty on the outside and fluffy on the inside.
I was trying to get the temp to 700 but couldn't quite get it that low without shutting it off. So it was about 730 and I cooked them for about 5 minutes mostly away from the flames. This is compared to the neapolitans at over 900 and maybe a 2 minute cook.
