We had coconut shrimp tacos last night. It was perfect! I prefer fish tacos more though and the best I have had were at Akumal Beach in Mexico.

    Holy. Shit. They were unforgettable.

Mexican food must be on everyone's radar lately! My friends and I had some fantastic Mexican food Saturday night. This place is just authentic grub and they don't skimp, on the portions or the booze in their drinks :D I had the chicken flauta and chicken enchilada, mmmmmmm! And they give you a lake of beans. Like seriously, it's a lake. Like you can fit a full sized boat on it

And now I have to avoid this thread because I'll want lunch at 9:30 lol

I LOVE Mexican food...always. However, I find in the summertime especially I truly crave it. :)

This morning I had a whole wheat everything bagel with light cream cheese (yes, I actually prefer light) and it was heaven! I don't eat bagels all that often, and hubby picked up a couple of fresh bagels from our local shop yesterday....mmmm. Fantastic. NY bagels are the best.

I also think the light cream cheese (neufchatel) is better.

I think I'm picking up some mango-pineapple salsa at Whole Foods on my way home - that shit is awesome.

PIMS are delish!! Minus the ants, of course! :)

I did a waffle dessert recently... homemade waffles that i froze (i live alone, so hard to make waffles for yourself without leftovers!)
    -Put waffle in toaster
-when its out, spread with NUTELLA
-scoop of butter pecan ice cream
    -maple syrup drizzle....

    WATCH. OUT.

    +1 on the neufchatel...

I am a big one for spicy food...and i don't know if this is available anywhere but regionally since the restaurant is here, but Frontera Grill sells salsa in grocery stores in the Chicago area; my favorite being "Jalepeno Cilantro"...for some reason, its extra good with blue corn chips

(side note: if you are ever in Chicago looking for a nice sit-down mexican food place, I highly recommend Frontera Grill, or its "classier" brother, Topolobampo. Both are Rick Bayless places and they are outstanding...Frontera is easier to get into- Topolobampo usually requires VERY far in advance reservations)

I went to an Italian restaurant today and had maybe the best meal I ever had in my life. It was a veal cutlet, lightly breaded and pan fried. Then it was covered with a "creamy brandy/pepper/mushroom sauce", and served with a side of garlic mashed potatoes that had brown gravy on it. It was like an orgasm in my mouth. It didn't really taste Italian, it was more like the most upscale version of Chicken Fried Steak and Mashed Potatoes that I ever had (naturally the brandy/pepper/mushroom gravy was a departure from white gravy), but I now pledge my allegiance to Italy just on account of the fact that it was served to me in an Italian restaurant.

I totally copped out cause it was a headache day for me. So I made Olivieri rainbow cheese tortellini and alfredo sauce. Though I did saute some garlic in butter before I added the packaged sauce. And then sprinkled parmesan on it. LOL Oh and I made asparagus and cut up fresh tomatos. Not the best meal but not the worst.

This sounds very Italian. Americans' idea of Italian food has been very limited for a long time and is finally opening up.

Well the mango-pineapple salsa isn't exactly spicy, but I am a big fan of really hot salsa with chips. I bought more of it yesterday, but ran out of tortilla chips. Doh!

I am committing to cook real food all week... a huge feat for me considering recent behavior. No frozen meals, microwave concoctions, take out, cheese and crackers or sandwiches...

last night: steak n shrimp, grilled portabellos ( a whole big pile of them), baked potato and green beans.
tonight: one of my favorite quick, healthy and easy meals- stirfry! Chicken with mushrooms, broccoli, snow peas, red peper, green pepper, carrots, bean sprouts...sauce will likley be some kind of garlic/spicy mixture, but I never know until I start making it. This will be on brown rice.
tomorrow was going to be baked ziti--but its going to stay close to 100 degrees here (Chicago!) until Thursday, so no oven until then, at least! :)

I make a pizza with fresh figs, prosciutto and carmelized red onions (stolen from the spotted pig).

Last night was a corporate dinner at Carmines in the city. I havent been there in awhile, but the food was pretty good considering they had 75  of us to serve. Great gulf shrimp cocktail, fried calamari and veal saltimbocca.
Tartufo was damn good as well.

Tonight: something green to offset the 3lbs. of food I had last night.

Some days it's just a good cheese and some nice crackers. But add a glass of red wine and- voila!- a meal fit for royalty!

I've been to Italy, with a girlfriend who wanted to visit every agriturismo spot there was. So my idea of Italian food isn't limited to Chuck E Cheese and Chef Boyardee. I never tasted anything like that. Was never served mashed potatoes with brown gravy either. Ate some veal, but it was very different.
