    The decorating is the hard part for me. Things like cookies and brownies I have no problem with, but it's rare that I make a cake, but I saw a recipe in NY Times cooking, and I decided to give it a shot. This is definitely the first carrot cake I've ever made though.

This morning I cut up a monk fish fillet and added it to the bowl covered and back into fridge, two hours before serving I added the red onion celery cilantro jalapeño and yellow pepper at this point I added the juice of two lemons, ground pepper, cumin, oregano hot sauce! Serve chilled with good Italian or French bread

    Inspired by local burger spot’s burger of the week last week. Since I missed out, I made one at home. It’s 2 x 1/4 lb patties, with chipotle mayo, jalapeños, fries and homemade queso sauce.

    I have my annual checkup on Thursday, but my doctor has said that my cholesterol level is lower than 95% of people for whatever reason.

    I'm down 40lbs since my bypass surgery. Cholesterol, blood pressure, and the rest were all good. 

    I want a Culvers double cheeseburger. 
    Mayonnaise 
    Raw onion
    Extra pickles
    Take me piece by piece.....

    Congrats on being down 40lbs. That's awesome.  A culvers double cheeseburger sounds mighty good right now. We don't have those here in Washington though. Probably for the best. LOL

    Down 40? Did they bypass your stomach?  :D  Awesome man, keep it up!

    I am at the age where seeing burgers like that do nothing for me. Those days are gone for this guy. Same with Pizza. And bacon. And butter. And bagels with cream cheese. The bagels were the hardest to give up since I am in NY. We have good bagels! 

    I do have cheat meals. Chinese lunch specials. Fried seafood made fresh with tartar sauce. BBQ ribs or pulled pork I make myself. Authentic Mexican. Five Guys (I think they make the best fast food burger even if it is $18), Shake Shack, Taco Bell, Chipotle and Chick-Fil-A when my daughter asks for it or we are traveling. And I love wings. We have a place nearby that makes killer wings. I drive an extra two miles to avoid driving past it!

    I give in occasionally or splurge when spending time with my daughter who is 18 and will eat anything, like jalapeno poppers and then a plate of chicken tenders and fries. With ranch. But I will fast for 18 hrs or even more after I eat that stuff. I just cannot handle a 1/3 lb. burger with fries and all the fixings anymore. My body rebels!

    Culvers is my choice although Five Guys is delicious.

    Nothing wrong with a splurge if 95% of your diet is appropriate for your personal health condition. And you can still eat very well while being health conscious. I cannot eat many carbs or sugar for health reasons. Not for wellness or whatever the Californians are calling it these days.  :D

    Oh I cheat. We all know that. Lou's pizza. A nice steak once every 10 days or so. But like yourself, weight loss is all about the carbs. Many fucking times I've gone 30-60-120 days eliminating most carbs. Buts its impossible for me to make it a lifetime change. I always go back to milk, bread, rice, potatoes. Haha

    Tonight I made pulled “pork” sandwiches. I took a couple cans of jackfruit, shredded it up and then strained it through a towel by twisting the towel the remove moisture. When it came out it was in a tight loaf shape. I coated in olive oil and then coated in a homemade rub. I put it in the oven until it got kind of crusty and then reshredded it in a pan and cooked it with bbq sauce. Topped with apple slaw.

    Looks good! Today I learned that Greece celebrates Easter on a different day than we do! I had no idea!

    This morning for breakfast I made a scramble with bacon, arugula, cherry tomatoes and cream cheese. I also cooked up some home fries, and served it with sourdough toast and a mug of Earl grey tea. This aardvark habanero hot sauce is also probably my favorite all purpose hot sauce.

    Your breakfast looks good too, expect of the hot sauce.. I'm not in to any spicy at all..

    We went to a Mexican restaurant near my apartment the other day. I got a chicken burrito with mole sauce. It did not disappoint!
