Grabbed a coffee on the way in before sitting in line for a bit. Snuck in some candy to keep my blood sugar high and then split a plate of fries with my friend. The lack of street lights was a big complaint from the OP. Gotta make sure they get more street lights. Ohana needs more veggies and street lights. If we come together maybe we can let Ed know. Power to the people!
My hot take is they could maybe add a few more veggie options but food wise it’s generally fine given the people who pay money to attend. So maybe leave things the way-ish they are. And if you want to make an environmental impact, figure something else out because people like meat.
I mean you could eat before the festival find a better vegan option and then head into festival! I don’t really think I’ve eaten too much food at any festival but I really don’t do festivals these days

I personally don't care about food at a festival, but my wife has all sorts of dietary restrictions and ends up bringing some food to the majority of long events, so I can appreciate a variety of options. That being stated, it seems they are going to sell what the majority of people want to buy. This is where we are, now, at least in America. People are generally fat, if not outright obese, in horrible shape, and would make fun of anything that stops them from gleefully ordering super sized everything, all the way to the grave.
I have only been once, in 2021. I seem to recall a couple of vegan options. Maybe it was just hummus, fries, and pizza with fake cheese. If you want to eat or use the facilities GO EARLY. By 5pm the lines were long for everything. A half rack of ribs and a strong drink at the Rib Joint after the festival never tasted so good.
Price of food and lines are a bigger issue than selection.
I went in 2021 and the alcohol prices were pretty crazy as well.
And the drinks were weak. They literally had guards making sure the bartenders did not overpour. Even if you threw in a nice tip. We snuck in Titos nips after the first day.

Has anyone asked Eddie about this? Visiting this last fall and having a greeeeeeeeeeat time seeing Neil Young, I was very surprised by how dreadfully meat-focused the festival was. Barely anything vegetarian to choose from at all. It's easy to stand on stage and talking about whales and the ocean and showing a video about the planet with Pearl Jam music as the soundtrack, but Eddie and the festival doesn't walk the talk at all. It was quite a disgraceful sight.
Compare this to Sweden's most famous/mainstream music festival Way out West (where Neil Young also has cancelled a gig - so let's refer to it as a sister festival):

it's just not feasible in north america. we're a very meat-centric region, and likely would have a lot of trouble selling tickets to a festival in the states with only vegan options. or even mostly vegan. I found the way McCartney forced his veganism on everyone else on the tour nauseating.
