    Gorgeous outside here on Long Island… went for a 6 mile run, then ate a egg white/ spinach/ mushroom/ goat cheese wrap with a lil hot sauce… so good, feel great… headed to the Mumford show tonight… couldn’t ask for better weather for an outdoor show 🙂

    For the past few months I have been eating really poorly in terms of healthy food. First I was traveling with the PJ tour and ate delicious food but probably not the healthiest. When I came home I just wasn’t into cooking much and have been ordering in a lot. Again, delicious but less nutritious. So I decided to try the Mediterranean diet for a while. For me to stick with it - it had to be easy. I found a great cookbook that covers 4 weeks. Each week has a shopping list and a schedule of what to eat each day, what to prep ahead and freeze, etc. also, the recipes are for one person. So I decided to try this. I started today. Lunch was chicken and Faro salad, and dinner was roasted butternut squash soup topped with sautéed pumpkin seeds and sour cream. What I like about this is that they use part of the dinner for lunch the next day. So tomorrow’s lunch is the soup (I have tons left for the freezer) and a grilled cheese sandwich. Here is what I had today:

    ^ it’s the best one to follow, to me doesn’t seam like a diet… more lifestyle you embrace. I don’t stick to a 100% clean version of it… but close enough.

    My wife got violently sick on stuffed peppers over a decade ago and refuses to eat them now. Prior to that we used to have them 8-10 times a year. These look amazing. 
    I cooked for several years on the Vegas Fire Dept. I once tried stuffed peppers but didn’t know the meat was supposed to be precooked. Did I have a recipe? Did I miss that step? I don’t remember but the results were not good. :lol:

    maybe your wife got hers “wobbie style.”

    Good job. Food looks good too. I've been hitting cucmber sandwiches. Also tomatoes. 
    Great harvest so far.

    Looks delicious! 

    l feel we all definitely need to slow it down a notch or two. Once that happens we can start considering and making healthy delicious food again. Like that^^

    everything looks scrumptious!

    my wife whipped this up tonight…summer spaghetti limone. I proclaimed it “restaurant quality”….and had seconds and thirds.
