my theory is the smaller, the better...bigger wings take longer to cook and on a busy night, the cooks skimp on the frying. they come out flabby and unappetizing. ill take a smaller wing anyday of the week
The key is (if its a place who knows what they are doing), is you ask for "extra crispy". They will be perfect, especially large wings.

They have a flavor called Carolina Gold.
