I was looking at the Debut Carbon Esprit DC or the 1Xpression Carbon Classic. Leaning towards the Esprit, as the extras seem the most useful right now and it frees up some money for a better phono, speakers or other accessories.
I'm looking at the Azur 651p for the phono. Not set on it, but it's the one that's jumped out at me in reviews and such.
Far as cables....I just want something not from the bottom of the barrel.

My understanding of the 651 is that it only adds the capability to handle MC & MM, whereas the 551 is MM. If those TT are both MM, I don't think there's a sonic difference. You should research a little before you spend the extra hundred. Regarding cables, I just picked up a bunch of monoprice cables. They are nice, thick, sound fine to me. They are only a few bucks a piece so I replaced a bunch of RCA around the house. If you aren't a hard core cable snob (don't mean that offensively), Monoprice is the way to go.

It is...I hate to throw it on the turntable. Mine is an old rickety one...kinda like forcing Sophia Vagara wear a burlap sack on the red carpet.

No offense taken on the cable comment....I know quite a bit about that rabbit hole. I've spent hours on end reading and listening to different guitar cable, only to end up with Monster and Mogami stuff from Guitar Center. My cables just need to be quiet and durable. I can make up the rest in a different part of the chain

The TT from Pro-ject should come with the RCA and ground. That will attach to your pre-amp and ground there. Then, yes, you run RCA to your pre/pro, AVR, amp or whatever your amplifier process is. If it's a long run and your amp supports XLR, then you should consider RCA>XLR cables, but for short runs, definitely not necessary.
For the speaker run, I agree. I hate loose strand connection. If your speakers and amp support banana plugs, you definitely want to buy those. So get oxygen free wire, 12-14 gauge (12 for long runs), and buy banana plugs for the ends. They are easy to put together, more secure and look much better. Important... Banana plugs must be shielded. You have to finish the job by using heat shrink around the gold pieces. It's easy, cut a piece, slide it in, and then take a lighter to it. It tightens and conforms. If you don't, touching two gold sides together could short your amp. If your amp and/or speakers don't accept banana plugs, you can always solder the ends. Not as pretty, but it works and creates clean connection. If you get the heat shrink, I'd suggest a black and red (or white) roll so you can tell the differences between +/-.
