I had leftover ingredients from pizza the other night that needed to be used. So I made pizza again yesterday. This one is a NY style crust recipe. What is interesting is that this dough was a very short fermentation. From flour to pizza in 3.5 hours. It lacks some of the yeasty taste of a longer cold ferment, but overall a pretty good crust. slightly crisp on the outside, light and chewy on the inside.

Cannot remember the last time I had pizza. Pizza and bagels are off the menu. If I do a carb cheat it is pasta. Raviolis or linguine with clams. Or maybe pappardelle with bolognese.

They are. But Dr.'s orders. No carbs no sugar due to high blood sugar levels. But I can eat steak, ribs, salami, wings with blue cheese, burgers and hot dogs all I want. Without the buns or bread.

A good side benefit of distance running.
Have to get creative in ways to get enough carbs into the body or you don't run well for hours in a row.
Even the liquid i drink during the long races contains carbs.

I wish I could run even short distances. But a chicken fight with my girlfriend on a wet yacht deck while wearing a tuxedo and leather soled shoes left me with me with a bum right knee. Great story but if I walk more than 4 miles the knee lets me know. It is all good, I still eat small portions of Japanese rice several times a week.

    Strange way to get hurt!
Both of my knees are ruined, my ortho told me to stop running in 2021. Fuck him.
I wear braces and use cold/hot therapy.
    No stopping.

I feel like this could be a pizza night.

Does anyone else have pizza unrest in the family when choosing where to order from?

Wife cannot have gluten so she wants a place that actually will make a true gf crust and meet her other restrictions.

Kid doesn't like a bunch of the really good places.  He is 11, so his brain sometimes does not work.  He prefers pizza hut.

I want Sicilian, Neopolitan, or a really good regular.

    The ven diagram is tough.
Wife usually wins out as her preferences are based on what she can/cannot eat vs what she likes.

We have a good local place. Their pizza and italian dishes are above average. My wife gets the margherita, my son gets the grandma pie, and my daughter prefers the typical pepperoni. The problem? That is $85! For pizza! $35 for chicken scarpariello! Although it does come with a large side of pasta. I am getting old as I now sound like my parents.

You could make meatzza. It's really good if you make it well!

Interesting. But I would have to skip the cheese and pepperoni. But it might work with mushrooms and pepperoncini or artichokes. We eat a ton of artichokes.
