Have you ever tried to mince them? Those bastards' skin got underneath my thumbnail and made it hurt for a week. That was the end of me hand mincing my own garlic (although i heard that if you soak them in water it makes it easier to peel). I'll stick to store bought, ground/minced lol. Good stuff though. I use it in a ton of stuff i make.
Ask a chef and they will tell you that the store bought garlic is soaked in a solution to preserve the cloves. That oil/ solution takes away all the flavor that the garlic provides. Always buy whole peeled garlic and chop in a food processor or even a blender will work. small amounts should be done by hand. Always remember to maximize garlic flavor never saute in a cold pan, Saute means " to jump " as in to jump out of the pan because its too hot. Always start Saute with butter, oil, or lard. Just a tip from a chef.....

i need to stop reading these food threads so close to lunch. yesterday it was the cheesesteaks, today i'm dreaming of garlic...it's making my mouth water.
My housemate stinks today I'd say... he was cooking last night and he kinda overdid the garlic. And I mean seriously bad, ya know where it gets up your nose like pepper does and stings? And your eyes water? I was laughing at him.
I always worry about the stinky thing, but I've never smelled it on myself or my roommate.....so I guess we don't eat THAT much!
Btw, I hate this 80 degree weather too. It's not SUMMER!!!!!!!!!!!!!!!!!!!!
bugs in the way...I feel about you

If you are running out of time to roast garlic, try this!
Slice a baguette in half, brush with Olive Oil. Broil until toasty. Take a clove of peeled garlic and just rub over. The hot broiled baguette will kind of melt the garlic and it's SOOOO good. Healthy too since it's just olive oil and garlic for quick garlic bread!

Snowboots or flip-flops, Meredith!!!!??????????!!!!!!!!!????????
Well, if it was snowy, I'd stay inside. Have a fire going, bundled under blankets, cuddling on the couch with a bottle of wine.
I'd be out in it! BRING IT ON!!!!!!!!!!!!!!

I'd be out playing in it until my feet got wet. Then I'd be too cold.
Then you could come inside and make something warm with garlic!!!!!!!

...and a strong scent of garlic gives me a migraine.
wtf?
I tried that. It didn't work very well but then I'm not a good cook. Roasted garlic's nice though with roast dinners.
