Breakfast this morning was a nice treat, we don't get to eat breakfast together often and the chickens have been molting for the last 2 months, but they are back on the lay as of this morning! A wonderful juxtaposition of fresh and preserved egg burritos. Chickenbutt-warm eggs, bacon from my cousin's fall feeder sautéed with onions from the summer garden, the last of the salsa from the garden, and Cabot Seriously Sharp cheddar in a warm flour tortilla. Homemade Wild Black Raspberry jelly toast to finish it off!
I still have 9 jars of spring jelly so some lucky friends and family are getting a treat thhat they surely won't value as much as I wish they would lol But that's just me being a nutcase when it comes to food.
Possibly starting a new Xmas Eve tradition this year - going with the Ukrainian portion of my bloodline and going with....Polish food (all eastern European food is the same really). Picked up some smoked kielbasa, fresh kielbasa that I'll boil in some kraut/beer then move over to the grill on low to finish off, Jewish Rye bread, homemade golabkis, homemade pierogis. So, basically meats and carbs for tomorrow.
Couple things I would try slightly different But absolutely no complaints. Hell of a piece of meat. Cooked it low and slow at about 200-225, then let it rest for 45 minutes then jacked it up to 550 to get a crust.
Wierd Al fucking rules, can't wait to see that one!

Turkeys -- so how are people preparing their Turkeys for Christmas?
Going to do a dry brine this year -- I really love it when tried on chickens so am imagining the same success w/Turkey. Kosher salt on/under skin - lots of it. 2-3 days in the fridge. Roast in the oven.
We'll be doing Kenji Lopez-Alt's turketta (we did it for Thanksgiving and it was marvelous). Link to Serious Eats Works well for a small group (we were only 6 for Thanksgiving)

We were 7 for Christmas. Did a 5 bone, 9lb prime rib - 300 for 2.5 hours then 500 for 5 minutes (using internal thermometer to watch the temp).

I am making a horseradish-crusted roast beef tomorrow. Gonna have roasted vegetables and au gratin potatoes with it.
Also will be steaming up clams as one of the many appetizers. Merry Christmas, you filthy animals.
Filets, potatoes, beans, and salad tonight. Basic but delicious.
i still gotta do that. Cioppino is aparently my responsibility. Gotta run by the fish spot and throw that together tomorrow
