    Plating can’t come into the same stratosphere as @eddiec but came out unreal.

    Yeah, I mixed Aloha Soy, brown sugar, sesame oil, garlic and five spice and coated it (residual still in pan), then coated again with five spice.

    I’m going to smoke tomorrow. 48 hours is ideal for skin to dry a bit. I’ll certainly post some throughout the process. Should be good.

    Put a fan on it you want that skin to be as dry as possible!
    Good suggestion. Have you tried it? I read about it, but want sure of results.

    Yes. I have not done a whole bird but I have a cheap usb powered fan that I have used with duck breasts in the fridge. Seems to help dry them out.

    Doing a leg of lamb here. I was going to smoke it, but the crust comes out a bit better roasted, so going that route.

    Love me some London Broil.

    I moved a couple of years ago and I STILL have not bought a Grill. I NEED to get one this Spring and soon.
