Nothing beats the king salmon, but this is damn good. Was rushed, kid's baseball didn't see us back until almost 8. Presentation suffered, but taste did not!
Love the variety using only one fish. Looks amazing.

Soy. I love soy hand rolls. Had a bunch, tonight. Didn't take a lot of pics tonight - forgot with all of the hand rolls and with a different carpaccio take. Also forgot to utilize the salmon roe.
Finished off the fish, it was good. Not as good as Salmon/Tuna combo. So far, that is our favorite.

Yeah, I'm going fishing next week and am bummed we didn't include a deep sea run. Wanted to eat the tuna on the deck of the boat. Not much better than beer and sashimi 60 miles out, the fish dead less than 10 minutes.

Due to EU regulations, Irish fishing boats aren't allowed to fish for Blue Fin Tuna. But if it's accidentally caught as a by-product, they can keep it. Doesn't happen often, but my fish guy posted this the other day. I already have my order placed for the market on Saturday.
