What's For Dinner????

I've been wanting to start this thread for a long time, I have two reasons to start it now. The boys are more interested in what goes into their bodies and it's autumn. I cook more often starting in autumn. I will try to update everyday or so with something new cooking in my kitchen and please feel free to share your own healthful meals. Mine will all be vegetarian so please be kind and respectful here

So unfortunately...tonights dinner wasn't the healthiest but it was homemade with love and veggies. :P Tonight we had vegetable pizza...homemade pizza dough, tomato sauce, broccoli, red onions, cheese and cherry tomatoes.

I made myself a mayo,lettuce,tomato and ham wrap at work. Put some mushrooms and balsamic vinegar inside it.
It lasted about 1 minute.

When I said boys...I meant the Pearl Jam boys but they may not care about what goes into their bodies...maybe they just care about where it comes from. Me, I care about both. And yes my son LOVES broccoli. He eats all of his veggies and will often, during our walks, see plants that he knows and say, "I can eat that!" Really, he is the best eater I have...he is wonderful. It's difficult to stop him from grazing in peoples yards though...he doesn't understand that not everyone is friendly to their lawn.
My daughter who is 4, she will be 5 next month, had a problem with the cherry tomatoes...other than that...dinner was a hit!0 -
So this morning brought me to the kitchen with a chill. I thought I would warm up the house with spice and pumpkin. The next two things I made are great ways to get orange food into your kids...and some picky adults too.
Pumpkin Pancakes made with love. I added pecans and wheat germ to add more nutritional value.
While the pumpkin was on hand I decided to make Pumpkin Muffins. I added pecans and raisins to add extra nutrition!
The pumpkin pancakes were a hit of course! The kids are trying to get me to let them have some muffins but those will be frozen for another day...they aren't happy with that!!Post edited by skyeriverwinter on0 -
last nights dinner

a Japanese winter dish consisting of several ingredients such as boiled eggs, daikon radish, konnyaku, and fish cakes stewed in a light, soy-flavoured dashi broth. Ingredients vary according to region and between each household (tofu, ginger chicken meatballs, squid and pork belly added in our house). Karashi (Japanese mustard) is used as a condiment.
Kinda of like Japanese hot pot, but its slow cooked

dinner last night, hubby made chicken fajitas with whole wheat soft tortillas and his homemade guacamole - yum! tonight, shrimp scampi...very yum! LOVE having a husband who is such a good cook!Stay with me...

So tonight, being Friday, was a night to take it easy.
Vegetable and Fruit Mandala ...cucumbers, celery, apples, grapes, pears, blanched cauliflower, carrots, cherry tomatoes, blanched broccoli, and radishes.
...believe it or not, I had to keep yelling at them to stop eating before dinner...and the plate before the picture was taken was much fuller...kids
To complete our meal we had our version of Quesadillas...they were filled with low fat refried beans, cheddar cheese, onions...and on a few...jalapenos...with a dollop of low fat sour cream.
this meal is a staple in our household...so...it was a hit!!!!0 -
Dinner, for me, right now (at 4:04 AM), is yogurt pretzels and homebrew. Tasty, tasty ESB.
What can I say? I'm old-fashioned.0 -
Kashi granola bar for breakfast. I have some left over beef stew from dinner at my mom's Thursday. Might have that for lunch later, maybe for dinner. I cook for myself to survive but I otherwise hate cooking. Love simple things like yoghurt & berries, steamed veggies with either brown rice or chicken. If I want something fancy, I'll either have dinner at my sister's or take myself out.believe it or not, we don't "need" anything. that is only the spoiled brat in us trying to fill some temporary solution to an emptyness that does not exist.

Yummy, although I'd skip the jalapenos. I could lick the screen!!!

We made some sushi today. Went to the market today and bought some lamb,pumpkin,calamaris and salmon(tommorrows menu). and for the birds ( bluetits and other tits) some seeds because snow came and they are getting hungry nowNo matter how cold the winter ,there´s a springtime ahead...0
