    you must get me your wifes recipe for hijiki salad....PLEASE!!! :D
    actually I am the one that makes a mean hijiki salad

    pour warm, not boiling, water over seaweed let sit for 30 mins
    shelled edamame
    bit of red and yellow pepper diced small

    dressing: rice wine vinegar, yuzu juice, vegetable oil and a little sesame oil (a few drops is plenty)
    I dont have quantities as I do it by taste-splash of this splash of that-basically a yuzu vinagrette but using a flavorless oil

    drain seaweed well, I usually pat it dry because I dont like when it gets too soggy-but my wife thinks I am crazy for doing it
    add vegetables and dressing-toss
    adjust seasonings
    garnish with shiso leaf

    there are hundreds of variations-once you get a feel for the seaweed, you can do what ever you like :D
    some cook the hijiki in dashi and add carrots-thats the more traditional way of serving it-but I like this salad a lot

  • Today's lunch is a very hard lunch to make because the kids are always running off with the tofu and veggies eating them before I can put lunch together.I was smart today...I sent them out to play...

    Today's lunch is...Momma's Tofu Salad...the tofu salad is made with tofu, celery, carrots, scallions, mayo and mustard. I placed it on a bed of romaine lettuce, savoy cabbage, red cabbage, carrots, tomatoes, radishes and scallions.

    I would try it this way first or even plain...my kids love plain tofu.

    EDIT: by the way...I am loving the input...sounds like we may have a few healthy eaters around here. ;)

    no I am not vegan...and there are/will be days that aren't so great....can't wait for the ALL THINGS CHOCOLATE DINNER!!!! They were not seitan nuggets...it was seitan strips soaked in shoyu then dredged in nutritional yeast mixed with garlic powder and ground pepper then semi-fried...if you know what I mean. Why would you be going crazy???? too heavy?

    Now if you'd said a good rye bread with roman lettuce and sliced pancetta with ripe tomatoes and provolone I would have let it go.

    either way that was better than what I had. I was working again and had another ham and cheese wrap

    Been to this many PJ shows: Reading 2006 London 2007 Manchester & London 2009 Dublin, Belfast, London, Nijmegen & Berlin 2010 Manchester 1 & Manchester 2 2012...

    ... and I still think Drive-By Truckers are better.

    Heh - just saw this thread. Tonight it was: lentil soup with rosemary, potato-dill bread with miso/tahini/carrot spread and miso kale. Yeah I'm vegan.
