Some good looking pie! Fired up the ooni the other night for the second time and had much better results. Probably firing it up again on Friday.I'll ride the wave where it takes me......0

Pie number one. Still can’t get that crispy bottom. A little undercooked in the middle. Outsides are great. The journey continues….

I think it looks good. Do you you use the method of turning the heat all the way down as soon as you put the pie in the oven? I do that and usually it gets the bottom relatively crispymcgruff10 said:

Yup we turned the heat all the way down and it definitely worked. Thanks for the advice.

My oven requires a 45 minute preheat. I have a Lynx (Napoli) gas pizza oven, but I think the same theory may hold true, I get much better results preheating double the recommended time. Also, I too, get a crispier bottom if I turn the heat down when I put it the oven. It comes out super crisp with zero bend. Keep experimenting and you’ll find what works best.
