    Smoked some ribs today using the 3-2-1 method. They came out pretty good.

    Smoked some ribs today using the 3-2-1 method. They came out pretty good.

    I wrap them in foil from the start because it's much easier that way.  Wrap tightly but with a vent or two, smoke for 4-6 hours depending on size.  Then I let it settle a bit and slather in BBQ and slap on the grill for a nice char.  Fall off the bone every time!

    Do you add anything for crunch, extra texture, etc.?  I recall chopped cucumbers and minced onions the last time I had it (added afterward).
    Yes Cilantro , minced onion add it 1hr before serving oh hot sauce to your liking too ..

    My 3 yr old son dips his french fries in Ranch dressing and I usually finish what he doesn't eat.

    I love the classic Ranch, on Romaine or iceberg.

    Do we have any jicama fans here?  I need to get into them again, and just read a recipe using them raw with lime juice and Tajin (the latter of which I've never tried).  Sounded good though.

    Sliced very think, jicama serves as the "taco" for some seared ahi, a dab of guac, and some pico.
    Phenomenal.  Had them in Phoenix one time about ten years ago and revisit on a binge every so often.
    Use a mandolin to slice the jicima very thinly.

    This is great for a bunch of reasons. I loved Good Eats. When I was first teaching myself to cook some and he made things interesting and explained relatively easy ways to cook

    Since....I thought he sold out and was kinda a douche.
    And he totally redeems himself

    That was a great one. Been a lackluster bunch of episodes recently but that one was awesome
