I often make meatloaf with the stuffings of chicken sausage mixed with ground beef. It's very lean, but still full of flavours. We once made it with buffalo ground beef, that was amazing. But buffalo is rather expensive. Sometimes I put some bacon on the top of the meatloaf to make it more moist, but usally surrounding it with veggies creates enough moisture.

    Enjoy your dinner! Sounds fantastic!!

My favorite meatloaf is made with half turkey, half beef and ground up cauliflower instead of the breadcrumbs. It's got a bunch of herbs, onion etc and a tasty sauce over the top too. Grain free for a change. Nobody knows the difference.

Never thought about adding cauliflower, goo idea. I sometimes use flax instead of an egg, and I always soak some of my homemade bread in water instead of breadcrumbs. Adding chopped almonds sometimes too. I really really like meatloaf. We have it all the time.

    Chef Speedy,

I've got a 5lb bag of potatoes that needs to be cooked ASAP. It's not a huge $$ loss but I hate to waste that much food. I'll use 4 or 5 potatoes (they're small) in a vegetable soup, but idk what to do with the rest so they will keep. The only thing I can think of is soup but I'm not sure if soup can be frozen?
    Any suggestions?

Make a big tray of Dauphinoise potatoes and hand some out to your neighbours. They'll love you.

Yesterday I did my shopping for the week
    3lbs ground turkey
    2lbs chicken breast
    5 pork cutlets
    Broccoli
    Asparagus
    Brussel sprouts
    Onions
    Spinach
    Avocado
    Mushrooms
    Corn
    All for under $40
Enough for meals to feed the 2 of us, lunch and dinner, the entire week. Yet people still want to convince me its cheaper to eat fast food/junk food? I am still not buying it.

Nice menu plan! I'm totally with you. Take a few moments, plan the menu, buy healthy whole foods. Don't buy junk so it won't be around to grab on a whim when hungry. Eat consciously. Take care of this amazing machine we all are given by eating well and moving a lot. Recognize your gratitude.

Now go do some push ups

So this slow cooker pork chop recipe I followed, turned out pretty damned good. I just need to maybe buy some bigger cuts, and make sure they are bone in, for the next time I make this.

    Pork chops, or cutlets.
Garlic and plenty of other spices.
    Some chopped green olives
    Red peppers
    Yukon Gold potatoes
    Tomato sauce

All layered in a crock pot
Cooked slow for about 6-7 hours.

    It turned out DELICIOUS!!!

Sounds real good.Maybe pork butt would work better and give you a real tender "pulled pork" situation.

Actually, I just need to buy the "bone in" chops. I screwed up and bought the cutlets. By the time I checked the crockpot, 5 hours later, I realized those cutlets were DONE!!! hahaha
So I just set the crock pot to warm, and called my wife and told her to get her ass home form work, or she was going to be eating "mush chops".

Ive done the pulled pork thing a few times too. Good stuff.

Chef Speedy can you help a girl out? What's for dinner at your place this weekend? I need some ideas?

Also do you have any pressure cooker tips? I'm a wuss and don't know where to begin.

    Thanks!
Oh please let it rain today.
