Funny thing about sausages - it's all about the texture for me. For example, I will not touch black or white pudding. I also won't eat the homemade ones you get from certain places (like Fairway) if they are chunky. But hot dogs, bangers, even liverwurst I will devour. In fact, I got excited recently when I realized liverwurst probably comes from Germany and I can get some while I'm in Berlin. I haven't had any since I was a kid and the place my dad used to get it from closed.
Anyway, texture. I KNOW what's in the sausages, but I don't care. Grind that shit up to a paste-like texture and I'm happy. Anything less than that and I won't touch it.

I used to work near a German deli that had THE best sausages and other imported goodies like sauerkraut and mustard. Got my dad a cooler-ful of their food once for his birthday...talk about a happy man
