I need opinions.. Hard boiling an egg.. do you poke?

has anyone heard the theory that eggs that have been sitting in your fridge for a few days work better than fresh bought eggs? We were just discussing this whole theory at work this morning. So to hear the "piercing" theory is quite interesting0

Put eggs in water, bring to rolling boil, cover for 12 minutes. Rinse in cold water.
I've never heard that the cooking method affects the peels sticking. Always heard you don't want to use fresh eggs, to avoid the sticking shells.
Vinegar is supposed to keep the egg from running out in case of cracks.0 -

I don't pick the eggs, just make the water boil heavy, when it does, turn of the heat but leave the eggs on the stove pour out the hot water after maybe 15 min....now perfect-not dry-not too soft0

I might ask in the Amish market if they wash their eggs too. I could imagine that the organic eggs are left alone here, but who knows? America seems to be quite obsessed with the danger of germs ...

1. Must have this. Eggs w/o this = well....I am not sure. Must have.

We have a dish in Germany that is called "lost eggs", you basically pour the insides of eggs into a sour-ish broth and let them cook. The vinegar in the sauce prevents them from spreading all over the broth, they remain together. Kind of looks like this in the end:Yumm, I might make this soon :think:

Salt, pepper and mustard are my faves to go with eggs. But I never had 5-10 in one go :shock: That might not be good for your health!
