Holiday cooking

I got off easy this year. Only had to make 2 appetizers, stuffed mushrooms and salami roll ups. Plus we made 10 lbs of mashed potatoes. My sister in law is taking care of the rest, and she is hosting both days.

What are you in charge of this year?

I volunteered for all of Xmas day dinner. It was an intentional decision. It guarantees everyone stays out of my way and leaves me alone for most of the day.

    On tap:

    - Slow-cooked back ribs (4 racks)
    - Mac n cheese
    - Baked sweet potato mash
    - Roasted Brussel sprouts with chestnuts and bacon
    - Cornbread muffins (regular and jalapeño)
    - Garden salad

    -Bread Bowl/dip with veggies
    -Homemade macaroni and cheese bites
-Homemade smoked Queso with fresh pico, fresh chips and homemade pretzel bites
    -Pizza Monkey Bread
-Pigs in a blanket (for the kids)

Xmas is my variable cook.  I host the family and in-laws, who generally suck at food.
    2years ago a pork shoulder.
Last year I prepped dough and sauce and helped everyone make pizzas.

    This year.....it is tacos.

We travel out on 26th so I don't want to deal with leftovers, so the big meat type of cook isn't in play.

    Thinking pan fried, panko, cod.
    Grilled halibut.
     Broiled shrimps.

    Corn and flour tortillas.
    Make some guac.
Also have purple cabbage, cilantro. Red onion, jalapeños, crema , avocado, cojita cheese, few different salsa, pico de gallo as options to put on.

Rice and black beans as sides.

    Chips/dip, all that shit.
    Lots of hot sauces.

    Beer.
    Booze.
Eat and leave, please.  Gotta get up early next day.

    Enjoy it, yall!

    That's an art ^

    Lot's of holiday variety^^^^^

My grandma used to make manicotti. Christmas eve was linguini with clam sauce and one with lobster sauce. Nice traditions.
She later confessed she didn't like cooking, but did it to bring the family together.

The noise of the chatter and smells in that house live in me forever.

    Enjoy all

I'll be making lobster casserole this afternoon to bring to sister-in-law's for Christmas Eve.

Wife made peanut butter squares for dessert.
    This weekend we rock Portland

Nice we used to get together with the whole family since my mother passed away two years ago it’s been just the four of us! My daughter usually makes Mac&cheese with lobster but this year since I’m doing the sea food she’s making a short rib dish.
wishing you both a merry Christmas to all your loved one’s keep cooking thanks for the great dishes you both bring to the forum table

Lots of butter, very rich, so I think you'd have to stop at 3.5lbs.

Don't you guys have a traditional roast dinner with Turkey? or do you save that for Thanksgiving?  We are having a vegetarian roast meal. I am responsible for cooking: Quorn roast, stuffing, roast potatoes, gravy, vegetables to include: roasted parsnip, roasted carrots, Brussel sprouts (not for me though), broccoli, savoy cabbage and leek mix.  I probably won't eat that much veg but I'll prepare a little bit of everything.

Whoever is having  tacos, that sounds good... @Fmeindabrain Same as you @spunky - us women having to do everything! @SPEEDY MCCREADY beer sounds easy.

Not hosting at all but have been at it for 2 days! Wouldn’t have it any other way.

Made a massive pot of gravy and meatballs, which isn’t the main meal anywhere, but will turn it into baked ziti to bring to my moms tomorrow (as a side for the beef tenderloin), drop off at some friends and family then have plenty of leftovers.

Just fried up smelts and made a pot of cioppino to bring up to my sister in laws today.

Got all the meats and cheeses from the Italian market in Philly.

Smoked salmon, whitefish salad and caviar with champagne for Xmas morning.

should be a great couple days. Enjoy all!!

I grew up doing turkey but my wife did convince me it’s redundant with thanksgiving and too soon, so typically do seafood Xmas eve and beef Christmas Day now

Same here. We always did turkey for Christmas, too, but 7-8 years ago became prime rib but since the kids have gotten older, we’ve discovered that everyone prefers appetizers throughout the day rather than a sit down meal.

I am jealous of some of the recipes here. We have a shellfish and peanut allergy in my house. Would kill for just a classic shrimp cocktail or even some crab cakes in the house. Oh well…

    Same.
We revised it about 5-6 years ago and it is fun to pick something different each year.

I stuffed the bird and put it in the oven and I prepped all the vegetables.

Then when my guests arrived me and the girls sat down while the guys finished up and served us! I got off easier than I thought. damn that was a good idea
