Did pick up a couple phatty ham hocks. Sliced up some onions, 1 beer, some water, maple syrup, mustard, peppercorns, bay leaf, a few whole cloves. Low for about 8 hours.
Plan to pull meat out. Remove bones. Maybe crisp up the fat. Put some brown rice in the broth. Cook til done.
Never tried this. Looked up a few recipes and consulted with Chef Jeff. He gave me the go ahead.
Might puree the broth and add a can of beans. Not really sure how it will end up. Seems like a good thing to cook on a snowy day.0 -

My mom used to take currant jelly and reduce it with a bit of stock for our ham gravy. Delicious. Have not had it in many years, but I am now craving it.
Edit: I guess if you add coffee that is a version of red eye gravyPost edited by Get_Right on0 -
Interesting. Like that idea. Mine came out ok. Have more, so added a jar of yellow tomato sauce i made. See how it will taste. Prob OK for me, but wouldn't serve it to anyone else. Rice in a crock pot got a little like risotto. All that pork fat kind of grosses me out!Get_Right said:Loujoe said:Did pick up a couple phatty ham hocks. If you like rice and eat it often, you need a Japanese rice cooker. And it does not have to be the $400 version. We always have rice available, basically 24/7. If we are making something with the rice we never use the rice cooker. Always flavor the rice in a separate pan/pot. I like to get Chinese sausage to make fried rice, and my wife likes salmon. We do eat a ton of fried rice and rice balls. Pretty much the only carb I consume regularly. And yes, it has to be rice from Japan. Koshihikari.0 -
Anyone try for the Noma LA 2026 reservations? The girl and I tried exactly at 10AM this morning. Fn sold out it seconds. Shit was harder than getting concert tickets! hahaha

I'm surprised to see a Nanaimo bar in your pastry selection. I didn't know you could get those in New York, or the US in general. Is it a proper one, or some kind of American version, or something completely different but it just looks the same?Post edited by PJ_Soul onWith all its sham, drudgery, and broken dreams, it is still a beautiful world. Same old story. I would guess no seats were ever available to the general public. VIPs had them all locked up. Just like concert tickets.0 -
That would be my guess. Have of the tables were prob to VIPs/celebs and the other half on their website to the public. Wonder if there is a secondary market for something like that.Get_Right said:eddiec said:mca47 said:Anyone try for the Noma LA 2026 reservations? The girl and I tried exactly at 10AM this morning. We did try for their spring openings in Copenhagen last year. Missed out but did get a notification that something was available two days in advance. Would have had to be in Denmark in less than 2 days....LOL. I could def swing LA if this happens as it's only an hour flight away.0 -

I do not work that hard for food. Not sure about Europe but there are definitely paid squatters in NYC.0 -
Tonight I took my girlfriend out to a restaurant that I recently read a glowing review of in the Seattle Times. It's called Atoma. It was spendy, but the food was fantastic.
This is their rosette cookie. It is filled with farmer's cheese and onion jam. I could've eaten an entire plate of these. They were incredible.
I had the Beef Coulotte, which had sunchokes, sauce bolo, crispy sweetbreads, and dolgo apple. All of the flavors worked very well. Delicious.
For sides we had this salad with curry ranch and almonds, and cheesy filomena potatoes

And for dessert we shared Baked Alaska with parsnip ice cream
