    Made a couple pies over the weekend. Good, but charred the crust a tad too much. Still good though





    The charred crust wouldn't bother me. Those look damn good.

    Made a couple pies over the weekend. Good, but charred the crust a tad too much. Still good though
    No such thing as charring too much. I prefer mine on the well done side. Last pies I made I starting precooking the pepperoni and bacon and it was phenomenal. Your pies look great.

    My father in law got in my wife's ear about it causing cancer and now she refuses to eat any crust that comes out like that. It's ridiculous. I assume if you eat 10 pizzas a day that are charred, you might have a problem....you might have a lot of problems actually. But a slice or two every now and then? Come on.

    Ahhh, the carcinogen argument.  Basically anything burnt is bad...

    Pepperoni + hatch green chili pizza I made last night. Grew up in New Mexico, where we put green chili on everything. Try it sometime, it’s delicious 😋

    Looks great! Do you use the medium heat chilis or the hotter variety?

    Ok so I’ve been on the search for years for decent tasting hatch green chili since I no longer live in NM. The little cans in the market are terrible. Costco sells a jar of the best I’ve tasted without getting it fresh from the roaster. I put it on my pizzas, cheeseburgers, breakfast burritos.. highly recommend.

    I love super spicy but the jar from Costco is Medium. Still has a nice bite. If we visit NM in season, we get a bunch of roasted hot chilis, remove the seeds then freeze in smaller baggies.

    Hatch chiles are a thing. I love xmas style over eggs or a burger with green chile sauce. You can pre-order them now from NM. Last time I ordered them they were frozen but still great.

    Was recently in Wrocław, Poland, and went to Iggy's Pizza.  It was amazingly good, and the spot was cool too.  Beer was fine.
