    I know that at home in Germany, they will have potato salad with wieners tomorrow, venison on Thursday and port roast with all kinds of stuff a day after that ... For my home fix this year, I'm gonna do German style beef rolls, Rouladen. With red cabbage and sauerkraut. I'm drooling just writing this :oops: :lol:

    Yup, after the night at the cousin's house :) It's basically beef meat ( :think: we got wafer steaks, not perfect, but usable) with mustard, a slice of bacon, a little onion and some pickled cuke. All wrapped together and fried and then slowly cooked for hours and hours till it just surrenders to the fork :) I love them, and we got the meat to do them this year :D I'm not sure I will try Goldschlager :lol:

    On Christmas Eve I make a Cajun appetizer called Crabmeat Avery.

    Various spices and veggies mixed together and cooked with an egg to hold it all together. Toss with lump crab meat. Spoon into ramekins. Pour in heavy cream. Coat with homemade Cajun mayonnaise. Sprinkle with paprika and bake in the oven for about 20 minutes.

    It's beyond fantastic.

    My wife's Uncle Joe's famous pasta extravaganza. A gravy (red sauce to some) that he works on all year...7 different types of tomato that he grows in his yard and jars for this batch. A thick pasta, homemade ziti or similar & homemade sausage, hard boiled eggs all mixed together with the gravy. Shit is downright amazing.
    They dont party too much so I will be the guy who evaporates 10-12 beers in a nice mellow evening with my wife's family.

    Christmas Day:
    A thanksgiving repeat -- turkey, stuffing, the whole deal

    Friday is Christmas 2 - my family is coming in and they put the entire process on hold so that they could celebrate with us...so Friday we do the whole presents, thanksgiving repeat part deux.

    We made Christmas Cookies last weekend -- about 20 dozen cookies for the different events/family members. If I dont see another cookie for a year that is cool with me but I imagine I will be gobbling them down all week.


    Pulled Pork sounds awesome, wish I could get my family to go for that!

    Yeah, my dad's family all came from Italy and before they all got too old/died we used to go to NY every year and one of them would host something similar. They were not meant to eat meat on Christmas Eve and so it was fish, fish, shellfish & more fish.

    wife is making here spinach casserole.

    my mom is making her mac and cheese--a new recipe, which i'm a little nervous about. the old one is MONEY.


    lots of beer....wife made some kind of punch. also, there will be eggnog. lots of eggnog.
