Yeah i've heard Dublin too, its fantastic. They're both almost perfect, but there is just something about the Vegas version, something i can't put my finger on. I remember thinking that this was the night they finally nailed the song live.

I think at this point in my listening I'm in the opposite boat; I've spent so much time listening to these songs in their live incarnations, the studio versions are bringing a new level of appreciation to them. "RVM" for example, the live version is a warhorse to me at this point, but the studio version sounds fresh and exciting, with that McCready lead behind the second verse, and that beautifully *short* middle section.
But to actually answer the question, "Don't Gimme No Lip" from Portland really sold me on the song. It's a total throwaway track, but it works really well in concert as a rousing getup number with Stone on vocals. And most live versions of "Inside Job," which never grabbed me on record.
Yellow ledbetter has become a favorite of mine since I first heard it live this year, now I've downloaded a bunch of shows where this song is absolutely great, I didn't like it at all as the b-side of the Jjeremy single, the production was just awful, but now I understand the greatness of that song.
Also Love Boat Captain from Cincinatti -06 shined a new light on a song that I was not quite happy about before.
BTW, on that boot you can find a lot of great performances of a lot of songs.

Faithfull (Wembley '07) - again never really liked it that much on the album but that song takes on a spiritual life of it's own when played live, one of the stand-out songs for me from that gig

Alot of people have been throwing around a bunch of Yield songs. I think you can make the argument that almost all the songs from that album seem so much greater when performed live, i.e. Do The Evolution, Faithful, Given to Fly, All Those Yesterdays, Wishlist. They just seem to have such an energy while playing them.
I have to make an argument for Porch. It's hard to compare the live versions to the album version, but its so tremendous in concert.
