    Leftover pasta with homemade sauce from Wednesday night's dinner. It was ok, but much better Wednesday. If I didn't eat it today I was going to throw it out since it would violate my 3-day rule to eat it tomorrow (I count the day I make it as Day 1).

  • They have Jersey Mike's in Chicago? I hope it's as good out there as the ones here in NJ. They better be slicing the meat fresh for every order or else they're giving that magical place a bad name.

    I brought my lunch today but it's just some little frozen Tyson chicken patty sliders. I'm trying hard to fight the urge to go get fast food instead because I'm starving and I know those little sliders just won't cut it today. I have an 80-minute drive home so I need something to fill up my stupid little belly. There's a McDonald's and Burger King both close enough to my office. I've eaten at the Burger King before so I know I can trust them. I've never eaten at this McDonald's before so it's a toss up on how good this one is but a McRib would be wonderful right now.

    I have leftover Kung Pao Tofu I made last night. Fried up the tofu with some carrots, red peppers, onions, scallions, and peanuts. I made the spice extra kickin', I mean it is kung PAO after all!

    That sounds amazing!! I need to learn how to properly cook tofu...every time I do it it's watery...maybe I'm buying the wrong kind?

    Buy extra firm and make sure you drain it well, if you take it out of the package, maybe put it on a papertowel and then use like a plate or something to press on the other side... but don't press too hard, you don't want to break it. The more water you get out of it, the more it absorbs the flavor of the dish.

    Bingo. Drainage is key.

    I put 2 paper towels on a cutting board, then tofu, then 2 more towels, then a plate. After 15 minutes, I change out the towels, flip it over, and let it sit another 5-10. You'll be shocked how much water comes out. I think a lot of people think sitting the brick on top of one paper towel for 5 minutes is enough, but it really isn't sufficient at all.

    dc-- can you please post that recipe or PM me or something? The sauce part especially. I am a spicy-sauce-aholic!!

    That sounds like a pretty efficient draining process. More effort than I go through, but I'm goign to try your procedure next time. :geek:
