With a song book as extensive (and of such high quality) as Dylan's, it's almost impossible to pick just one favourite. But most of the time (pun not intended, though that is also one of his best) it's Tangled Up In Blue for me. Specifically the version on The Bootleg Series Volumes 1-3, Rare & Unreleased.
