    I cook my beans in an instant pot as it is easier than using the stove. I season the aquafaba and use it for stock. I cooked dark red kidney beans and I planned to cook Rajma Dal. I haven't cooked that before. I wasn't sure if it was a soup or more of a stew or a dip. I have a recipe in Cool Beans by Joe Yonan.

    I food-processed three red onions and removed the water from them in a pot for 20 minutes. Then I added other spices and pureed tomatoes. I put this group of ingredients in the instant pot, and then the beans and aquafaba. It burned. Boo.

    However, as I can turn anything plant-based into a soup, I transferred most of it to a pot on the stove, added more stock, and made soup. It was delicious! OMG! The spices/red onion/pureed tomato brought out the sweetness of the bean, and I didn't know they could be sweet. Probably the red onion. I think of beans as having mostly mild flavor, but this recipe brought my appreciation to a new level. Very good.

    Used a hand blender and blended it all up. Threw the beans and pork in. Now wait a couple hours.

    hit it with a fesh squeeze of lime today.   Pork really falls apart after a few hours more of cooking today.  Going to freeze up the rest so I don't od on it.
