Hard-Boiled Eggs

I keep fucking this up and it's super-frustrating for me cause I'm the motherfucking eggman in every other egg aspect. Over-easy? Super easy. Scrambled? The best. Sunny-side Up? You betcha. Omelets? Puhlease. But hard-boiled, notsomuch.

I let the water come to a full boil, then I turn off the heat and drop the eggs in ... 20 minutes later I crack those suckers and they're STILL runny ... which is good, but not for egg salad.

Where did I go wrong?

    DUDE! I can't hard boil eggs either. It's like I have a mental block or something. It REALLLLY sucks especially since I love deviled eggs.

    Um you took the water off the heat! Boil for 9-10 minutes and they will be hard!

    OMG YES!! And I *ROCK* eggs otherwise, just like you! I like my eggs over-medium...and have no problems flipping them. Just can't seem to manage hard boil them.

    oh i am the master-flipper. how do u want them, over easy? lots of runny yoke? no problem. it's all about the quick technique and lots of lube (butter).

    I use a teeny bit of butter, but I've found that nonstick spray works best when flipping eggs.

    The eggs should be in the water while you are bringing it up to boil.
    And use cold water, just enough to cover the eggs by an inch.
    Don't crowd the eggs.
    When water comes up to a boil, turn off the burner and move the pot to a cold burner. Wait 12 min and remove the eggs.
    If the eggs are just out of the fridge, you should wait about 15 -18 min.

    It sounds so easy when you describe it...but seriously, if I were to go home tonight and try this they'd come out way overdone...the yolks would turn brown.

    Don't turn off the heat.

    I boil water, put egg in, let water boil for 6 minutes, remove egg for perfect soft boiled egg.

    For hard boiled, I'd probably go 8-10 minutes.

    That's about what I do... But I bring the water to a boil with the eggs in, then cover the pan and cut the heat off (while keeping it on the burner as it cools).

    In 10 minutes I take the eggs out and fill the pot with ice water. I've heard this shrinks the eggs a little in the shells, so they are easier to peel.

    I also put a little white vinegar in the water as well. This prevents the yokes from turning green.

    for perfect eggs... let the water boil... drop the eggs in for 5 minutes while the water is still boiling... then turn off the stove and let the eggs sit for 15 minutes longer...
