I don't think you have that many choices, do you? I can easily get to Brussels and from Brussels you can be in Ghent in less than an hour with the train, and from Ghent it's about 20 - 30 minutes to Bruges. It's a small country. I can be everywhere!

Easter is earlier, but too early for schools. Therefore G is off for good friday and easter monday, but her real 'easter' hols are a couple of weeks later.
