as for the sausage brands i cant help with that because i go to the local italian meat market to get the best
i dont use supermarket sausage(not that its bad) i just get the extra good stuff when possible
a normal sausage is alittle smaller than a hotdog but thicker of course(i just leave them like that)
but u can cut them to any size u want
