Im a bit of a lover of the guitar solo, and a few decent ones that spring to mind in my opinion would be....

and some are more complicated than others...

Let there be rock - AC/DC.
Even flow, Yellow Ledbetter, Garden (Tampa 8/12/02), - PJ obviously.
Baker Street - Gerry Rafferty is pretty neat. (haha.. scorn me, I dont care)
Wanted Dead or Alive - Bon Jovi.
Georgia - Ian Moss version.
Prison Blues - Jimmy Page (theres 50 others for Pagey)

Tell us the guitar solos that make you want to get up and fly into air guitar greatness...

exactly. Should've been listed first frankly.

Satriani is a great player but jesus christ somebody needs to slap that pretentious jack-off. His playing has absolutely no soul whatsoever.

    Anyway..

Cortez the Killer - Neil Young

Here are some I like that haven't been mentioned:

    Crossroads - Cream
When The Music's Over - The Doors
Pigs In Zen - Jane's Addiction
    Ocean Size - Jane's Addiction
    Three Days - Jane's Addiction
    Whitewater - Kyuss
Cinnamon Girl - Neil Young (Best one note solo ever!)
Immortality (Live At Benaroya Hall) - Pearl Jam (McCready's finest work as far as I'm concerned)
    Vamos - The Pixies
Better Living Through Chemistry - QOTSA
Song For The Dead - QOTSA
I Could Have Lied - Red Hot Chili Peppers
Big Empty - Stone Temple Pilots
Running Down A Dream - Tom Petty

Sorry, that's almost enough for a CD right there. Seriously, check some of them out though. I left out lots of Pearl Jam and Led Zeppelin cause they've been re-iterated many times. Props to the person who mentioned Turn it Again by RHCP because it's Frusciante's shining point on Stadium Arcadium.

Any Jimi Hendrix or Stevie Ray Vaughan song.

Black Magic Woman and Samba Pa Ti by Carlos Santana are above average as well.

I dunno about that.. not because it isn't great, but because of all the fantastic lead work Corgan's done..

Rhinocerous (good lord what a solo)
    Cherub Rock
    Soma
Stand Inside Your Love (PERFECT ebow solo from James)

and of course the end of Rocket.
