Not albums, but two songs I love to listen to when driving -- Lola by the Kinks (for sunny summer days with the windows down & the radio blasting), and Ol' 55 by Tom Waits (for early mornings on long distance drives).

The whole "Lola vs Powerman and the Money Go Round" album is great for driving, as is "The Kinks Are The Village Green Preservation Society".
