I'm a little biased to them, but check out Caifanes.
One of the best (if not the best) Mexican rock bands ever.
Check either of these 2 albums: "El Silencio" or "El Diablito". Great stuff in there.

Soda Stereo (great rock band from Argentina) and the solo albums from his lead singer Gustavo Cerati (some rock mixed with electro-sounds), Manu Chau's first cds but i'd rather recommend Mano Negra (former band, he traveled the earth and played along with musicians from all around the world). Also Lumumba (reggae band from Argentina, just great and underrated)...Fabulosos Cadillacs (mix rock, ska, reggae, salsa)..there are some other great bands but i'd recommend those for start. There's also a cool cd which mixes Rolling Stones songs with brazilian Bossanova (match ups). Enjoy

ive gotten hold of many of the bands mentioned here( soda stereo, gustavo cerati, ely guerra, los tres, carlos vives, aterpicados.....) and havent discovered much. Only picked at most of them though,,,,,,,still have to say that julieta venegas' Bueninvento is my favourite album in spanish language that I have so far heard.
