my wife is a bit on the short side so I'm wondering..

Do people typically stand up the whole time at an EV show like we would for a typical PJ show?

    nope, we sit
    eV tells us to sit down at the beginning of the show
    it's very very very very hard to stay seated, even for the slow acoustic songs
    i stood up occasionally and for the last 4-5 songs at the LA shows

    Everyone stood for Hard Sun though (at least for the 2 shows I went to on the West Coast).

    It is a very laid back show - Ed sits - you sit and if you don't sit - he mentions how he wants you to sit.

    they tried to make me sit in san fran balcony for pj and i told the guard its my ticket that i paid for ill stand if i choose

    I can understand it quite clearly. It isn't a freakin Metallica concert. Ed's got the storyteller role here really in an intimate setting, almost as if you're sitting around a campfire hearin him tell stories through music. plus, like you said, it's a mellow show. I associate standing up with rocking out, which this show isn't. When I was at Mansfield III in 2003, we were all seated for their acoustic opening set, and it was pure magic. Why not be rested and sit as well?
