    They’re putting chopped hot dog and fries on authentic neapolitan pizza in Italy. Anything’s fair game now 🤌.
    Oh I know… I was in the old Venetian empire last year, Italy as a kid…. Croatia ( old Roman Empire) idk fuckin all combined 4 yrs of my life… Native New Yorker who never moved, former pothead, worked as a kid in a pizzeria … I still need credentials here 😆… I never judged one pizza here… only good comments … it’s not personal, it’s just ridiculous

    Tonight I made two Detroit style pizzas. The first is tri-color and the second is pepperoni,sausage, and hot honey. Both made with Wisconsin Brick cheese and Whole Milk Low Moisture Mozzarella. These turned out great.

    I used the dough recipe from this book, but split the dough to make 2 8x10 pizzas instead of 1 9x13. I'm excited to try some other styles from this book.

    That is their feature pizza for May.
     They say “No culture is safe from us” 🤣 
    & mix in influences from around the world. They have an amazing Filipino pie on their regular menu and also a brussel sprouts pie that even brussel haters love.

    It was really really simliar to a grandma pie.  it was called their signature pie: EVOO, Parmigiano, Mozzarella, Tomato Sauce and Fresh Basil.

    I had to use up some ingredients. So I made more Detroit pizza.

    I made a few changes this time around. This time I let the dough cold proof for a day and a half, and then I took it out of the fridge and let it finish proofing in the pan at room temp for about 12 hours. Second difference is that this dough was wetter than the first batch. I wanted to make sure the dough was fully cooked without scorching the outside, so I baked at a little bit of a lower temp, and it worked out great. I also found a small piece of black truffle cheddar at the store, so i cut it into cubes and but it on top of the dough for the par-bake. The results were awesome, where the first attempt was very bready and more like cheese and sauce on top of focaccia, this was more like pizza.
