For nice places to drink I like the Grassmarket and Stockbridge areas. Slightly more touristy is the Royal Mile.
There are lots of good restaurants in the area too.
Shopping - the main shopping street is Princes' Street, parrallel to this run Rose Street and George Street (slightly more upmarket).
Slightly more unusual shops you can try Grassmarket, Cockburn Street and Victoria Street.
And relaxing, always nice to sit in Princes' Street Gardens or take a walk up to Arthur's Seat.

Edinburgh seems such a great place.. I wish I could stay there longer. (i.e. I wish I'd have the money to stay there longer) but Glasgow (where I'm staying) seems awfully nice too.
EDIT: I'm not going there in August.July..
