Although the text quoted seems to be pretty dumb for a textbook, the title is misleading. I couldn't gather that Nessie was used to debunk evolution from that. All it said was that Nessie could be a dinosaur, and in a separate quote stated that the book or school does not cover evolution. I couldn't make the jump to "Loch Ness Monster Used to Debunk Evolution."
The fact it had thirty-some students enrolled in the school at the time also tells you a little about the education of that school.
That being said I don't think its fair to make the claim that Christian schools use Loch Ness Monster as proof evolution is false.0
