Gotta go with mozzarella. It's just so delicious. You can have it on pizza, have it in/on pasta dishes, put it on chicken or meatballs, batter it and fry it, or eat it by itself. Oh, and you can put it on garlic bread! Yum yum!

Extra Sharp Chedd (Cabot Hunter's....omfg it is one of the things I miss most about living in VT even 19 years later)
Ricotta is cheating, isnt it? Not really a cheese.
Pretty much all cheeses rule -- but the best cheese is a mix of cheeses. I make a vicious 7 cheese mac n cheese with:
2 types of sharp Chedd
Mozz
Asiago
Gruyere
Mont Jack
Muenster
It is the best thing ever. Saw it on TV once 4-5 years ago and have been making it ever since. CHEESE!
