For me, I'd say Death Cab For Cutie on VFC tour, before Death Cab was big nationally and before they became too saccharine-sweet. Iggy Pop is up there, in 1998. MMJ was good, too.

But I will add that I was able to see Pearl Jam open for themselves at Toronto '09. Ed singing Sugar Mountain, Mike doing a couple of solo songs, Ed and Jeff doing Bee Girl.
I saw Henry Rollins open for them in Berkley back in 1993. It was Halloween night and the show was amazing.
WOW...saw Rollins Band a couple of times...pure aggression...Henry still got it in him, but usually tours with spoken word now...never saw that but i'm sure it's good food for the mind
STICKING WITH THE THREAD:
usually miss the openers
Band of Horses...singer reminded me of perry f from Jane's Add
mudhoney was cool "all the lucky ones are gone"
Ben Harper...missed him but liked when he sang with PJ

By far.
Least Favourite - Ted Leo & the Pharmacists and Mudhoney
Most seem to rave about Mudhoney, but I just can't get into them.
Supergrass was OK.
Mudhoney was "meh"

Also, Liam Finn for the '08 Ed shows was stellar
