I'd also like to post Mastodon opening for Slayer. Free surprise show from myspace back in 2006.
Mastodon owned it that day.
7/2/06 - Denver, CO
6/12/08 - Tampa, FL
8/23/09 - Chicago, IL
9/28/09 - Salt Lake City, UT (11 years too long!!!)

Marah. I saw these guys (and girl) open for Driveby Truckers in July and had never of them before...unless I had forgotten. Three songs in I was sold....very Springsteen-y quality to some of their stuff, but by no means a rip off sound. They put on one of the most energetic shows I've ever seen. But I think the line-up changes a lot.
Saw a Brad show back in '98 or so and the band Headswim was opening. They blew me away. They broke up shortly after but this thread made me go check 'em out again. Really great mid 90's rock record called "Despite Yourself". I'd reccomend it
Also, saw Jack Johnson opening for Ben Harper at Lupos in RI. I think that was '00. Had no clue who he was. He just seemed so cool while performing his brand of easy, laid back rock
“I know this song so well, I can smoke a cigarette, have a drink, brush my teeth, take a shit, and mow the lawn while singing it. But I'll only be doing a couple of those things during this version.”
Ambulance Ltd supporting REM in 05 were pretty good for someone I'd never heard of but I also had the pain of enduring The Zutons  and Feeder before the headliners....
Like a book among the many on a shelf...
Dublin 02 Arena - 22/6/10. Belfast Odyssey Arena - 23/6/10. London Hyde Park - 25/6/10. Berlin Wuhlheide - 30/6/10.
Manchester MEN - 20/06/12. Manchester MEN - 21/06/12
So many over the years. I'll give two Pearl Jam openers.
Grant Lee Buffalo in 1994 at The Fox Theatre in STL. It was them and The Frogs. Being 17 years old I was ready to hate GLB, but they were so fucking good! Been listening to them ever since.
The other is Death Cab For Cutie at the same venue in 2004 on the Vote For Change Tour. Had heard a lot about them but had never given them a chance. They absolutely destroyed that night! Again, been a fan ever since. Own everything they've put out.
It's the "unintentionally" part that's hard ... as a student of live music, I always bone up on who's opening to see if I wanna check them out, so it's rarely unintentional.....
Metallica opening for Iron Maiden 84/85ish -- but we knew 'em.
Everyone I've seen open for PJ: Bad Religion, Sonic Youth, BH&R7, Band of Horses, yeah Liam fer Eddie
I knew Trent Reznor would kill at the Bridge School in 2006, I just didn't know it was gonna be wholesale slaughter, his arrangements on grand piano with a string quartet were ungodly. Warren Zevon at Bridge. Not sure benefit/festivals count, but COUNTLESS acts at Bridge.... Neko Case blew me away at Bridge this year.
Zee Avi, G-Love, and ALO all opening for Jack Johnson were AWESOME, bought albums by each.
Hagar blew Aerosmith off the stage this past summer in Oakland.
But my all time fav hands down has got to be Built To Spill at 2009 Outside Lands Festival. Have never been so instantly hooked on any music, like Doug had been pulling the music outta my very head! Got to see them past 2 nights at the FillmoreSF!!! Just been outta my mind over B2S! Silversun Pickups were fun, bought their album, the daughter digs them, and Incubus was on my "must see" list -- but Built to Spill was one of those electro-theraphy sessions to the skull! Now I'm thinking right!
And then ... the one that got away. Wife and I had tickets to Plant/Page early/mid 90s? That No Quarter tour thing. We got a late start from Bay Area and got up to Sacto Cal Expo and misssed the opening act who I very much wanted to see ... turns out we missed them forever ... lead singer was dead within 24-48 hours if I recall: Blind Melon.
I saw At the Drive in twice in a month before i knew who they were
Once opening for RATM and then opening for the Foo Fighters/Ben Harper a few weeks later
they were rad
“I know this song so well, I can smoke a cigarette, have a drink, brush my teeth, take a shit, and mow the lawn while singing it. But I'll only be doing a couple of those things during this version.”
Manchester Orchestra opening for Clap Your Hands Say Yeah in Perth in 2008.
The Strokes opening for You Am I in Sydney... can't remember the year.
The White Buffalo opening for Gomez in Newcastle, maybe 2007.
PJ - Sydney 1998; Sydney 2003; Sydney, Melbourne, Newcastle 2006; Melbourne, Sydney 2009; Gold Coast, Melbourne, Sydney 2014.
EV - Canberra, Newcastle, Sydney 2011; Sydney 2014.
The first few that come to mind are Liam Finn opening for EV and ISIS opening for Tool.

I saw Janes Addiction supporting Fields of The Nephilim in 1988 at Brixton Academy. I had no idea who Janes Addiction were - I didn't even know their name until after they played. They were fucking incredible. Blew the roof off the place. Best opening act hands down.
Buddy Guy. By 10 miles. Saw him open for Petty this summer.
He tore the roof off the place.
I walked away from the show just beaming about how awesome Buddy Guy was and it was all I could talk about for like a week. Petty was ok too, but was outstaged IMO.
Last night...Company Of Thieves opening for The Hold Steady. They fucking stole the show. The singer is a powerhouse and has a colossal energy, and she's way cute too.

They say every sin is deadly but I believe they may be wrong...I'm guilty of all seven and I don't feel too bad at all
Now my 2nd favorite band.

They blew both The Exies and Everclear out of the water, landed up picking up their CD at the show, and been in love ever since.
Somehow i was pretty ignorant to them and now i'm a huge fan of theirs.

Van Halen in '78 is one of my all time favs. DLR declaring Lewisham (London) to be the rock n roll capital of the world was a hoot!
Then again, he gets it honest.
Metallica opening for Iron Maiden 84/85ish -- but we knew 'em.
